Kaori’s Easy Recipe: Learn to Make Korilakkuma Coffee Jelly Parfait

22.July.2018 | FEATURES / FOOD

With just a small bit of ingenuity, turn everyday food into something cute using Kaori’s recipe series! With a few simple ideas, an ordinary recipe magically transforms into a cute dish.

In this recipe you’ll learn how to make a super easy Korilakkuma Coffee Jelly Parfait with Dororich, a coffee jelly that can be bought in Japan.

1: Ingredients

Coffee Jelly (*the coffee jelly used in this recipe was bought at Daiso)

Chocolate Pens

Milk

Ice Cream

2: First we will make Korilakkuma’s facial features with the chocolate pens. Draw your favourite illustration of Korilakkuma onto parchment paper. Be sure to draw the base of the ears sharp so they can stick into the ice cream later on.

Fill in the lines of the ears and mouth with a white chocolate pen. Once they’ve fully solidified, draw on the eyes and details of the mouth in black and use pink to finish the ears. Place into the freezer to fully harden.

☆If the features aren’t fully solidified they will melt and break when you put them onto the ice cream.

☆The coffee jelly used in this recipe was prepared according to the instructions on the box.

☆The coffee jelly sold at Daiso can be made by simply dissolving in water.

3:

①Use a hot ice cream scoop to scoop out a ball of ice cream. Using a heated scoop ensures a rounder shape. It only melts the ice cream a tiny bit so it’s fine to add the facial features. It’s harder if you try adding them to hard ice cream as they will break apart easily.

②Place your solidified coffee jelly into a glass and add extra ice cream for add layers.

4: Finally, top with your Korilakkuma you made in step 3.

If you a little bit of milk and mix you’ll get a delicious combination of ice cream and coffee jelly♡

  • Kaori’s Easy Recipe ― Learn How to Make a ‘Korilakkuma Apple Cake’

    02.June.2018 | FEATURES / FOOD

With just a small bit of ingenuity, turn everyday food into something cute using Kaori’s recipe series! With a few simple ideas, an ordinary recipe magically transforms into a cute dish.

This time you'll learn a simple recipe to make a gorgeous Korilakkuma apple cake that even novice cooks can follow!

    1: Ingredients

15cm cake tin (you can also use a loaf tin or smaller tin to cook individual ones)

    100g weak flour

    5g baking powder

    60g unsalted butter

    80g sugar

    2 eggs (small or medium)

    1 apple

    10 walnuts

    Cinnamon sugar (to taste)

    Preparation

・Thinly slice the apples and squeeze over lemon juice. Cut 2-3 to the slices into a Korilakkuma shape.

    ・Roughly chop up the walnuts.

・If you don't have cinnamon sugar, mix together one tsp of cinnamon with 1/4 cup of sugar.

・Combine the weak flour and baking powder and sieve.

Melt the butter over a bain-marie.

2: Separate the egg yolks and whites. Thoroughly whisk the egg whites. Combine with the egg yolks, add the flour and mix.

3: Stir the mix in step 2 well. Add the melted butter in the places where it looks like there's some flour left and mix.

Add the mix to your cake tin and add your sliced apples that you prepared (but not the Rilakkuma shaped pieces).

4: Place the walnuts all over the mix.

    5: Sprinkle over cinnamon sugar.

Cook in a preheated oven at 170℃ for 20-25 minutes, then add the Korilakkuma apple slices and cook for a further 5-10 minutes.

6: If you cut a good shape of Korilakkuma out with your apple then leave it as it is. If the shape didn't turn out well, cut out a white chocolate Korilakkuma and place it over the apple.

7: Draw the facial features with a chocolate pen.

Once the apple cake is done, decorate all of your Rilakkuma, and you're done.

The moist cake goes together perfectly with the apple, walnuts and cinnamon sugar! It's delicious eaten fresh, but its level of moistness increases if you eat it the next day.

  • Kaori’s Easy Recipe – Learn How to Make Pompompurin Pumpkin Tarts

    12.May.2018 | FEATURES / FOOD

With just a small bit of ingenuity, turn everyday food into something cute using Kaori’s recipe series! With a few simple ideas, an ordinary recipe magically transforms into a cute dish.

For this recipe, you'll learn how make mini Pompompurin pumpkin tarts! This is a simple recipe you can make with just a blender.

    1: Ingredients

    12 Tart shells

150g Pumpkin (deseeded, skin taken off and made soft)

50ml Fresh cream (In this recipe I used soy milk)

20-30g Sugar (Depending on the sweetness of the pumpkin)

    1 Egg yolk (small egg)

    Sliced Chocolate

    Tinned yellow peach

2: Steam and make the pumpkin soft in the microwave. Place the softened pumpkin, sugar, fresh cream (or soy milk) and egg yolk into a blender.

3: Blitz until it's mixed like in the photo above.

4: Pour the mixture from Step 3 into the tart shells and place into a 180℃ preheated oven. Lower the temperature to 140-150℃ and cook for 10-15 minutes. (You don't want to brown anything, so we cook it on a low heat.)

If it looks like it's about to start browning, cover with aluminium foil as this will prevent it from burning.

5: Once your cooked tarts have fully cooled down, use a round cutter to make a hat out of chocolate and a tear-drop cutter to make ears out of the yellow peach. The round ball on top of the hat can be made by breaking off some sliced chocolate and rolling it with your fingers.

Finally, drawn on the eyes, nose and mouth with a warmed chocolate pen!

The crunchy tart shells and moist pumpkin paste go pair together wonderfully! And the sourness from the yellow peach is perfect, making is really tasty♡

  • Kaori’s Easy Recipe – Learn How to Make “Rilakkuma Tear & Share Bread”

    29.April.2018 | FEATURES / FOOD

With just a small bit of ingenuity, turn everyday food into something cute using Kaori’s recipe series! With a few simple ideas, an ordinary recipe magically transforms into a cute dish.

In this recipe, you'll learn how to make cute tear & share bread of the character Rilakkuma!

First, you'll need to make a pack out of a milk carton for the mix later.

    1. Open up a milk carton that you have washed and cut it into a cylindrical shape.

    2. Staple together your pieces from Step 1.

    3. Now, staple them together into a square that measures about 10-12cm.

    4. Wrap with aluminium foil.

    ☆これを2つ作り型はOKです

    Now, onto making the bread!

    1: Ingredients

    240g strong flour

    5g dried yeast

    15g sugar

    3g salt

    5g cocoa powder

    60g unsalted butter

    1 egg

    75-80ml lukewarm water

2: Put the strong flour, dried yeast, salt and sugar into a bowl.

☆If the salt (塩) and yeast (イースト) are put side by side it will be difficult for the mix to rise to keep them separate.

Mix the lukewarm water and egg together.

Aim at the yeast and pour into the mix, then stir with a wooden spatula until it's no longer floury.

3: Take out the flour once it's at a point where it's no longer floury, add the unsalted butter and knead with your hands.

4: Once your dough in Step 3 is mixed together, split the mix in half, and roll one of those halves as it is into a ball. With the other half, mix it bit by bit with the cocoa powder that has been dissolved in the lukewarm water and shape into a ball. Leave them to rise for 40 minutes.

Once they have risen, divide both the plain mix and cocoa mix into 4 pieces (my pieces weighed 53g).

☆The amount of grams will change depending on the way you have kneaded it and the temperature, so it's better to divide them into 4 after having measured their weight.

Make ears from your 4 divided pieces (2g each).

Once you've finished diving each part, line them up like in the photograph to set aside for 10 minutes.

After 10 minutes, put them into the pack you made in the beginning.

☆Don't put on the ears yet.

Once they're in, leave them to rise again for another 30 minutes before on the ears.

5: Once you've completed everything in Step 4, place them into a preheated oven at 180℃ then lower the temperature to 150℃ and cook for about 7-minutes.

After that, so they don't take on a brown colour, take off the aluminium foil and cook for a further 10-minutes.

6: Leave to cool down completely, draw on the faces with a chocolate pen, and you're all done♡

In this recipe I made the bread with 2 different kinds of batter, but you can make it with just plain if you like and it'll be plenty kawaii.

If you wrap them with a ribbon they make a perfect present!

  • Kaori’s Easy Recipe – Learn How to Make “Duffy Cherry Blossom Jelly”

    14.April.2018 | FEATURES / FOOD

With just a small bit of ingenuity, turn everyday food into something cute using Kaori’s recipe series! With a few simple ideas, an ordinary recipe magically transforms into a cute dish.

For this recipe, you’ll learn how to make cute Duffy cookies with cherry blossom jelly, perfect for springtime!

    1: Ingredients
    ☆Annin Tofu
Daiso Annin Milk Purin 1 box
    Milk 400ml

    ☆Cherry Blossom Jelly
    Salted cherry blossoms 10 buds
    Water 200ml
    Sugar 1 tbsp
    Food colouring Just a little

    Gelatin 4-5g
    Water 15ml
☆Prepare the gelatin by dissolving in the water.

    ☆Cookie Dough
Please refer to my previous article where I made Hello Kitty sandwich cookies.
    https://www.moshimoshi-nippon.jp/39411
(For this recipe we’re making Duffy, so I mixed a little bit of brown food colouring into the dough)
★You can use anything as a substitute for the cookie shape.

2: After lightly rinsing the salted cherry blossom buds, soak them in water for 30 minutes to one hour to extract the salt.

3: Make the annin milk purin according to the instructions on the box.

4: Once the mix from step 3 has cooled down, transfer it into a vessel and store in the fridge to solidify.

5: Add a little bit of pink food colouring to the 200ml of water.
☆If you add the food colouring into the water while it’s in the pot you won’t know how deep the pink colour is due to the colour of the pot, so be sure to add it beforehand in a clear bowl or jug so you can gauge the colour.

6: Transfer the water in step 5 into a pot and add the sugar and salted cherry blossom buds from step 2. Once the sugar has melted well, add the gelatin that you dissolved in water. Mix well.

7: After checking that your mix from step 4 has solidified, pour your cooled down mix from step 6 on top and place in the fridge once more to solidify.

8: After cutting and shaping your cookie dough, use a knife to cut into the armpits as shown by the arrow.
☆When inserted into the glass it will deepen.

Once the cookie is cooked drawn the face on with a chocolate pen.
(Of course, you can leave it as it is too♡)

Once that’s done, top your jelly with the cookie!
