“DOU” – the ‘dorayaki’ specialists

Dorayaki is a classic Japanese confection that comes in the form of a pancake filled with sweet red bean. DOU’s best-selling item on its menu is a twist on dorayaki, having more of a light texture to it similar to that of the sponge cake in the West. They separate the egg yolk and egg whites and whisk them individually before using a steaming method on site to make the product fluffy and give it a divine flavour. The ingredients they use are what give the overall flavour an exquisite balance. DOU uses velvety, melt-in-the-mouth fresh cream straight from Hokkaido, high quality  ‘Miyabi’ adzuki beans which are cooked to perfection to create a gorgeous fragrance, and ‘gyūhi’ (a softer kind of mochi) that is made from mochi rice called “Hakuchomochi” that is cultivated in Hokkaido.

The gyoza sold at Kakekomi Gyoza are like xiaolongbao and full of mouth-watering meat juices. They use carefully selected, high-quality pork to bring out the best possible flavour and texture of the meat. They are also picky about their wheat flour to ensure the meat is wrapped nicely in a delicious chewy what blanket.     Fans of Japan and Japanese culture may know that Kobe’s food scene is not to be missed. A new restaurant, KANBE, is now open and tells the story of the city’s food culture. The grand opening was on November 30 in Sannomiya.     The story begins with water, the source of Kobe's food. The city’s famed fare like Kobe beef, Suma salmon, and seasonal vegetables  will take the stage through storytelling, projection mapping, and uniquely planed dishes. Ingredients are served to guests the same day that they are delivered to the restaurant, offering the freshest possible experience. The restaurant also offers a wide selection of drinks made in Kobe, including Nada Gogou sake and Kobe wine. These are made using Nunobiki water from the Rokko mountain range, meaning that everything guests enjoy was truly made in Kobe.   At KANBE, visitors will chat with a storyteller who weaves the story of Kobe's food into the experience. A chef himself, he is well-versed in cooking methods, food history, and nutrition. The 18-meter-long counter adds to the experience by displaying seasonal scenery, the water of Nunobiki, and the night view from Mt. Rokko. Nature sounds, like the murmuring of Nunobiki Falls and the chirping of birds, also echo through the restaurant in time with the projection mapping, creating an atmosphere that feels alive.   Why not come enjoy a new kind of dining experience?

  • Japan’s Largest Sake Event TOKYO SAKE FESTIVAL to be Held in Shinjuku in October

    Japan’s largest sake event, TOKYO SAKE FESTIVAL 2022, will run from October 4 until October 6 at the Shinjuku Sumitomo Building’s Triangle Square.   The event’s aim is to make sake more mainstream around the world, with the first festival taking place in 2020. Tokyo Sake Festival blends sake with entertainment, showing off the very best of Japanese culture to those who may be new to craft sake. For the third year, former NMB48 member Yui Takano will serve as ambassador. Takano is known for leaving her idol career to manage the sake specialty store Yui Sake Shop.    Tokyo Sake Festival 2022 is bringing together forty carefully selected sake breweries from around Japan, including Inoue Seikichi, winner of the Champion Sake award at IWC 2022. Tonoike Sake Brewery, winner of Kura Master 2022’s President’s Award, will also be in attendance.
